2 cups No Yolks® Broad Noodles
1 large roasted red pepper, cut into strips
6 1/2 oz marinated artichoke hearts, drained and chopped
1/4 cup Kalamata olives, pitted and chopped
1/2 cup cherry tomatoes, halved
1 1/2 Tbsps reduced-fat Italian salad dressing
1/8 tsp salt
1/8 tsp ground black pepper
2 oz sliced salami, cut into strips

Cooking Directions:

1.  Prepare noodles according to package directions.  Drain and rinse under cold water. Drain well.

2.  Place noodles in large serving bowl. Add roasted pepper strips, artichoke hearts, olives and tomatoes. Toss gently but well.

3.  Add dressing, salt and pepper. Toss again. Arrange salami strips over salad.
