2 cups No Yolks® Broad Noodles
1 lb cooked shrimp, peeled and deveined
1 cup frozen peas
1 each scallions, minced
2 Tbsps fresh lime juice
4 tsps canola oil
1 1/2 tsps honey
1/4 tsp salt
1/4 tsp ground black pepper
1 Tbsp fresh mint leaves, for garnish

Cooking Directions:

1.  Prepare noodles according to package directions; drain.  Cool to room temperature.

2.  Place cooked noodles, shrimp, peas and scallion in a large salad bowl.

3.  In a small bowl, combine lime juice, oil, honey, salt and pepper. Stir well.

4.  Pour over salad and toss gently but well.  Sprinkle on mint.
