12 oz No Yolks® Broad Noodles
2 Tbsps unsalted butter
2 Tbsps olive oil
1 medium onion, sliced
garlic cloves, chopped
1/2 lb bacon, diced
1 lb mushrooms, sliced
1 Tbsp tomato paste
1 Tbsp paprika
  salt, to taste
  freshly ground black pepper
1 cup sour cream
1 Tbsp chopped parsley (optional)

Cooking Directions:

1.  Cook noodles according to package directions.

2.  Meanwhile, cook bacon in a non-stick skillet over medium heat for 3 to 4 minutes, or until slightly crisp. Drain off excess fat.

3,  Add olive oil, butter, onions, garlic, and mushrooms and saute until onions are translucent, about 3 to 4 minutes.

4.  Add tomato paste, paprika and salt. Let simmer for 2 to 3 minutes, or until fragrant. Remove from heat, stir in the sour cream, and season to taste with salt and pepper. 

5.  Spoon mixture over warm noodles. Top with chopped parsley, if desired.
