12 oz No Yolks® Stir Fry Noodles
8 oz sugar snap peas
1 cup frozen edamame, thawed
8 oz shredded carrots
1 can (8 oz.) sliced bamboo shoots, drained
  lemon vinaigrette dressing
1 can French fried onions
  fresh mint leaves (optional)

Cooking Directions:

1)  Prepare noodles according to package directions. About 1 to 2 minutes before pasta is ready, add peas to boiling water to blanch.  Drain and rinse noodles and peas in cold water.

2)  In a large bowl, combine cooked noodles, snap peas, edamame, carrots and bamboo shoots. Add dressing and toss to coat all ingredients. Chill.

3)  Serve topped with onions and mint leaves.
