Ingredients:

8 oz No Yolks® Kluski Noodles
2 Tbsps butter
2 1/2 cups (about 8 oz.) sliced fresh mushrooms
2 cups diced cooked ham
1/8 tsp ground nutmeg
2 each eggs, lightly beaten
1 cup sour cream
3 Tbsps grated Parmesan cheese
2 Tbsps bread crumbs

Cooking Directions:

1.  Heat oven to 375-degrees F. 

2.  Cook noodles according to package directions; drain.

3.  Meanwhile, in large skillet over medium-high heat, melt butter; add mushrooms. Cook 5 minutes or until tender; stir in ham and nutmeg. 

4.  In large bowl, stir together eggs and sour cream until smooth; stir in noodles and mushroom mixture until evenly blended. Spoon noodle mixture into greased 2-quart casserole dish; sprinkle with cheese and bread crumbs. Bake 25 to 30 minutes or until hot and bubbly.

5.  Serve with a simple salad with vinaigrette.
