12 oz No Yolks® Extra Broad Noodles
2 Tbsps butter
shallot, chopped
garlic cloves, minced
  coarse salt
  freshly ground black pepper
3/4 cup low sodium chicken broth
10 oz fresh spinach leaves, chopped
1 can (14 oz.) marinated artichoke hearts, drained and chopped
6 oz cream cheese, softened
1/4 cup grated Parmesan cheese

Cooking Directions:

1.  Prepare noodles according to package directions. Drain.

2.  In a large skillet over medium heat, melt butter. Cook shallots until soft, then add garlic and cook 1 minute more. Season with salt and pepper.

3.  Add chicken broth and bring to a simmer. Add spinach, artichoke hearts, noodles, cream cheese, and Parmesan and stir to combine. Serve immediately.
