Ingredients:

2 Tbsps extra virgin olive oil
1 each red bell pepper, chopped
1 each green bell pepper, chopped
1 lb shrimp, peeled and deveined
2 each Andouille sausage, thinly sliced
2 each garlic cloves, minced
1 Tbsp Cajun seasoning
  coarse salt
  freshly ground black pepper
12 oz No Yolks® Dumplings
1 can (14 1/2 oz.) fire roasted diced tomatoes
2 3/4 cups low sodium chicken broth
1/2 cup heavy cream
1 1/2 cups shredded Cheddar cheese
3 each scallions, thinly sliced

Cooking Directions:

1.  In a large, deep skillet over medium-high heat, heat oil. Add peppers and sausage and cook until peppers are tender and sausage is browned, 5-7 minutes. Add shrimp and cook until pink and cooked through, 3 to 4 minutes. Stir in garlic and cook until fragrant, 1 minute more. Season with salt, pepper, and Cajun seasoning.

2.  Reduce heat to medium and add in dumplings and stir until coated. Then, stir in fire-roasted tomatoes, chicken broth, and heavy cream.

3.  Simmer, stirring occasionally, until dumplings are tender and liquid is mostly absorbed, 13 to 15 minutes.

4.  Turn off heat and stir in cheddar. Garnish with scallions.
