Slow Cooker Taco Al Pastor Noodle Soup

Flavored with chipotle, pineapple and lime, this pork and noodle soup inspired by tacos al pastor is garnished with avocado, cilantro and crumbled feta cheese.

Ingredients:

12 oz No Yolks® Broad Noodles
pork tenderloin (12 oz. each), cut into 1-inch pieces
1 each onion, diced
1 each tomato, diced
1/2 cup diced pineapple
2 Tbsps lime juice
2 Tbsps olive oil
2 Tbsps tomato paste
1 can (4 oz.) Chipotle in adobo (minced), plus tablespoon of sauce
2 each garlic, diced
1 tsp ground cumin powder
1/2 tsp salt and freshly ground black pepper
4 cups reduced sodium chicken broth
1 each avocado, peeled, seeded and sliced into thin wedges
1 cup corn
1/3 cup crumbled feta cheese
1/4 cup fresh cilantro leaves, chopped
1 each lime, cut into wedges

Directions:

1. In slow cooker, combine pork, onion, tomato, pineapple, lime juice, oil, tomato paste, chipotle, adobo sauce, garlic, cumin, salt and pepper. Stir in broth.

2. Cover and cook on Low for 6 to 8 hours or High for 3 to 4 hours or until pork is very tender.

3. Meanwhile, cook noodles according to package directions; drain. Stir noodles into slow cooker until well combined.

4. Divide soup among 4 bowls. Top with avocado, corn, cheese and cilantro. Serve with lime wedges.

Tip:
Substitute boneless skinless chicken thighs for pork if preferred.
