Easy Shrimp Scampi

Sometimes a recipe is so simple to make they put “Easy” right in the name. But there’s no rule against it being delicious, too—which it is.

Ingredients

  • 12 oz No Yolks Broad Noodles
  • 1 1/2 lbs peeled shrimp (I used pink Argentinian)
  • 2 Tbsp butter
  • 2 Tbsp extra virgin olive oil
  • 4 cloves garlic, pressed or minced
  • 1/2 cup dry white wine
  • 1/4 tsp red pepper flakes
  • 1/4 tsp Black pepper
  • 1/4 cup fresh parsley, minced
  • Juice of half a lemon

Directions

  1. In a large skillet, melt butter and olive oil over medium heat. Add in pressed garlic and cook for about a minute.
  2. Add wine, salt, pepper, and red pepper flakes; bring to a simmer for about 2 minutes.
  3. Add in the shrimp and sauté for about 2-3 minutes or until they turn pink. Mine were Argentinian so they are naturally pink.
  4. Mix in the No Yolks Noodles, fresh parsley, and lemon juice, and toss. Enjoy!
