Easy Shrimp Scampi
Sometimes a recipe is so simple to make they put “Easy” right in the name. But there’s no rule against it being delicious, too—which it is.
Ingredients
- 12 oz No Yolks Broad Noodles
- 1 1/2 lbs peeled shrimp (I used pink Argentinian)
- 2 Tbsp butter
- 2 Tbsp extra virgin olive oil
- 4 cloves garlic, pressed or minced
- 1/2 cup dry white wine
- 1/4 tsp red pepper flakes
- 1/4 tsp Black pepper
- 1/4 cup fresh parsley, minced
- Juice of half a lemon
Directions
- In a large skillet, melt butter and olive oil over medium heat. Add in pressed garlic and cook for about a minute.
- Add wine, salt, pepper, and red pepper flakes; bring to a simmer for about 2 minutes.
- Add in the shrimp and sauté for about 2-3 minutes or until they turn pink. Mine were Argentinian so they are naturally pink.
- Mix in the No Yolks Noodles, fresh parsley, and lemon juice, and toss. Enjoy!
