Pesto, Ham and Goat Cheese Noodle Salad
Bright, bold, and satisfying. This refreshing noodle salad combines tender No Yolks® noodles with creamy goat cheese, savory ham, and zesty pesto. Perfect as a light lunch or a crowd-pleasing side.
Ingredients
- 12oz. bag No Yolks Broad Noodles
- 1 1/2 cup Frozen Peas
- 2 cups Baby Arugula
- 2 cups Diced thick-cut deli ham
- Basil pesto, as desired
- 4oz. Crumbled goat cheese
- Basil leaves, for garnish
- Red pepper flakes, to taste
Directions
- Cook No Yolks® Broad Noodles according to package instructions, and 1 minute before the noodles are finished cooking, add the peas and cook until Drain noodles and peas and rinse under cold water. Set aside.
- Meanwhile, using a vegetable peeler, shave the asparagus into thin
- In a large bowl, toss the noodles, peas, asparagus, arugula, ham and pesto together until coated. Top with goat cheese, basil and crushed red pepper flakes.
