Ingredients

  • 12 oz No Yolks Stir Fry Noodles
  • 8 oz sugar snap peas
  • 1 cup frozen edamame, thawed
  • 8 oz shredded carrots
  • 1 can (8 oz.) sliced bamboo shoots, drained
  • lemon vinaigrette dressing
  • 1 can French fried onions
  • fresh mint leaves (optional)

Directions

  1. Prepare noodles according to package directions. About 1 to 2 minutes before pasta is ready, add peas to boiling water to blanch.  Drain and rinse noodles and peas in cold water.
  2. In a large bowl, combine cooked noodles, snap peas, edamame, carrots and bamboo shoots. Add dressing and toss to coat all ingredients. Chill.
  3. Serve topped with onions and mint leaves.
