Salmon and Vegetable Garden Salad
For fans of salmon, this quick and easy salad is a creative and delicious new way to enjoy it in a light entrée or side dish.
Ingredients
- 3 cups No Yolks® Broad Noodles
- 1 cup green beans, steamed, cut into bite-size pieces
- 1 cup cherry tomatoes, halved
- 1 can (14.75 oz) sockeye salmon, drained and flaked
- 1 Tbsp fresh chives, minced
- 1/4 cup tomato juice
- 1 Tbsp tomato paste
- 1 Tbsp white wine vinegar
- 2 tsps olive oil, divided
- 1 garlic clove, minced
- 1 Tbsp fresh basil leaves, minced
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp paprika
Directions
- Prepare noodles according to package directions. Rinse with cold water. Drain well.
- Combine cooked noodles, green beans and tomatoes in a large salad bowl. Add salmon and chives. Toss gently to mix.
- In a small bowl, mix tomato juice, tomato paste, vinegar, oil, garlic, basil, salt, pepper and paprika. Pour into salad. Toss gently but well.
