Salmon and Vegetable Garden Salad

Ingredients

  • 3 cups No Yolks® Broad Noodles
  • 1 cup green beans, steamed, cut into bite-size pieces
  • 1 cup cherry tomatoes, halved
  • 1 can (14.75 oz) sockeye salmon, drained and flaked
  • 1 Tbsp fresh chives, minced
  • 1/4 cup tomato juice
  • 1 Tbsp tomato paste
  • 1 Tbsp white wine vinegar
  • 2 tsps olive oil, divided
  • 1 garlic clove, minced
  • 1 Tbsp fresh basil leaves, minced
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp paprika

Directions

  1. Prepare noodles according to package directions.  Rinse with cold water.  Drain well.
  2. Combine cooked noodles, green beans and tomatoes in a large salad bowl. Add salmon and chives. Toss gently to mix.
  3. In a small bowl, mix tomato juice, tomato paste, vinegar, oil, garlic, basil, salt, pepper and paprika. Pour into salad. Toss gently but well.
