Smoked Salmon with Noodles
Quick to make, light to digest, and easy to enjoy. Throw it all together and let the cream dressing combine your favorite flavors.
Ingredients
- 3 cups No Yolks® Broad Noodles
- 1 cup grape tomatoes, halved
- 1 red onion, chopped
- 1 Tbsp capers, drained (optional)
- 4 oz smoked salmon, thinly sliced
- 2 Tbsps low fat cream cheese, softened
- 5 Tbsps reduced fat sour cream
- 1 1/2 Tbsps fresh dill, minced
- 1/4 tps salt
- 1/4 tsp ground black pepper
- XX lemon wedge (optional)
- XX fresh dill, for garnish
Directions
- Prepare noodles according to package directions. Drain.
- Place cooked noodles in large shallow bowl. Add tomatoes, onion and capers. Toss gently but well. Arrange salmon on top.
- In a small bowl, beat together cream cheese and sour cream. Stir in dill weed, salt and pepper.
- Stir sour cream dressing into noodle salad or serve on the side. Garnish with lemon wedges and dill weed.
