Creamy Roasted Carrot & Parmesan Rotini
Sweet roasted carrots blended into a creamy, vitamin-packed orange sauce that is perfect for the whole family!
Ingredients
- 8 oz No Yolks® Protein Rotini
- 3 large carrots, peeled & chopped
- 2 cloves garlic
- 0.5 Cup milk
- 0.5 cup grated parmesan
- 1 tbsp olive oil
- Salt & Pepper
Directions
- Roast carrots and garlic at 425°F with olive oil, 20 min.
- Cook pasta per directions on box, set aside.
- Blend carrots/garlic with milk, parmesan, salt, and pepper.
- Toss with hot rotini and serve extra cheese on top.
