Slow Cooker Taco Al Pastor Noodle Soup

Flavored with chipotle, pineapple and lime, this pork and noodle soup inspired by tacos al pastor is garnished with avocado, cilantro and crumbled feta cheese.

Ingredients

8 ozNo Yolks® Broad
1 (about 12 oz)pork tenderloin, cut into 1-inch pieces
1onion, diced
1tomato, diced
1/2 cupdiced pineapple
2 Tbsplime juice
2 Tbspolive oil
2 Tbsptomato paste
1canned chipotle in adobo
2 Tbspadobo sauce
2 clovesgarlic, diced
1 tspground cumin
1/2 tsp eachsalt and pepper
4 cupssodium-reduced chicken broth
1avocado, halved, pitted, peeled and sliced
1 cupcorn, cooked
1/3 cupfinely crumbled feta cheese
1/4 cupfinely chopped fresh cilantro
1lime, cut into wedges

Directions

  1. In slow cooker, combine pork, onion, tomato, pineapple, lime juice, oil, tomato paste, chipotle, adobo sauce, garlic, cumin, salt and pepper. Stir in broth.
  2. Cover and cook on Low for 6 to 8 hours or High for 3 to 4 hours or until pork is very tender.
  3. Meanwhile, cook pasta according to package directions; drain. Stir pasta into slow cooker until well combined.
  4. Divide soup among 4 bowls. Top with avocado, corn, cheese and cilantro. Serve with lime wedges.

Tips

Substitute boneless skinless chicken thighs for pork if preferred.
