Charred Broccolini and Whipped Ricotta Penne
Creamy whipped ricotta, bright lemon, and smoky broccolini for a forkful of fun.
Ingredients
- 8 oz penne
- 1 bunch broccolini, halved
- 1 cup ricotta
- 1 lemon zested
- 2 tbsp olive oil
- 2 tbsp pine nuts, toasted
- Salt & Pepper to taste
Directions
- Cook penne according to package directions, keep warm and reserve 1/3 cup pasta water.
- Sauté or grill broccolini in olive oil until charred.
- Whip ricotta with lemon zest, salt, and splash of pasta water.
- Toss hot penne with ricotta and broccolini. Top with pine nuts.
- Serve and enjoy!
