Salmon and Vegetable Garden Salad

For fans of salmon, this quick and easy salad is a creative and delicious new way to enjoy it in a light entrée or side dish.
|3 cups||No Yolks® Broad Noodles|
|1 cup||green beans, steamed, cut into bite-size pieces|
|1 cup||cherry tomatoes, halved|
|1 can (14.75 oz)||sockeye salmon, drained and flaked|
|1 Tbsp||fresh chives, minced|
|1/4 cup||tomato juice|
|1 Tbsp||tomato paste|
|1 Tbsp||white wine vinegar|
|2 tsps||olive oil, divided|
|1||garlic clove, minced|
|1 Tbsp||fresh basil leaves, minced|
|1/4 tsp||freshly ground black pepper|
- Prepare noodles according to package directions. Rinse with cold water. Drain well.
- Combine cooked noodles, green beans and tomatoes in a large salad bowl. Add salmon and chives. Toss gently to mix.
- In a small bowl, mix tomato juice, tomato paste, vinegar, oil, garlic, basil, salt, pepper and paprika. Pour into salad. Toss gently but well.
