Spicy Shrimp Salad

Another light noodle salad perfect for spicing up your lunch, this recipe is ready as quickly as you can sauté some shrimp.


2 cupsNo Yolks® Broad Noodles
2 tspsMexican-style seasoning blend
1 lbcooked shrimp, peeled and deveined
1 cuppeas
1scallions, minced
1red bell pepper, chopped
2 Tbspsfresh lime juice
4 tspscanola oil
1 1/2 tspshoney
1 Tbspfresh mint leaves, for garnish


  1. Prepare noodles according to package directions; drain.  Cool to room temperature.  Place cooked noodles in a large bowl.
  2. Place spicy seasoning blend and shrimp in a plastic resealable bag, close and shake well to coat.
  3. Add shrimp and seasonings from bag, peas, scallions and bell pepper to bowl.
  4. In a small bowl, combine lime juice, oil, honey and mint. Stir well. Pour over salad; toss. Arrange in serving platter.
