Spicy Shrimp Salad

Another light noodle salad perfect for spicing up your lunch, this recipe is ready as quickly as you can sauté some shrimp.
|2 cups||No Yolks® Broad Noodles|
|2 tsps||Mexican-style seasoning blend|
|1 lb||cooked shrimp, peeled and deveined|
|1||red bell pepper, chopped|
|2 Tbsps||fresh lime juice|
|4 tsps||canola oil|
|1 1/2 tsps||honey|
|1 Tbsp||fresh mint leaves, for garnish|
- Prepare noodles according to package directions; drain. Cool to room temperature. Place cooked noodles in a large bowl.
- Place spicy seasoning blend and shrimp in a plastic resealable bag, close and shake well to coat.
- Add shrimp and seasonings from bag, peas, scallions and bell pepper to bowl.
- In a small bowl, combine lime juice, oil, honey and mint. Stir well. Pour over salad; toss. Arrange in serving platter.
