Antipasto Salad

Ingredients
- 2 cups No Yolks® Broad Noodles
- 1 roasted red pepper, cut into strips
- 6 1/2 oz marinated artichoke hearts, drained and chopped
- 1/4 cup Kalamata olives, pitted and chopped
- 1/2 cup cherry tomatoes, halved
- 1 1/2 Tbsps reduced-fat Italian salad dressing
- 1/8 tsp salt
- 1/8 tsp ground black pepper
- 2 oz sliced salami, cut into strips
Directions
- Prepare noodles according to package directions. Drain and rinse under cold water. Drain well.
- Place noodles in large serving bowl. Add roasted pepper strips, artichoke hearts, olives and tomatoes. Toss gently but well.
- Add dressing, salt and pepper. Toss again. Arrange salami strips over salad.
