Noodles with Bacon, Mushrooms and Paprika

A hearty, full-flavored dinner made with buttery noodles, mushrooms, crisp bacon and paprika.

Ingredients
| 12 oz | No Yolks® Broad Noodles |
| 2 Tbsps | unsalted butter |
| 2 Tbsps | olive oil |
| 1 medium | onion, sliced |
| 2 | garlic cloves, chopped |
| 1/2 lb | bacon, diced |
| 1 lb | mushrooms, sliced |
| 1 Tbsp | tomato paste |
| 1 Tbsp | paprika |
| 1 Tbsp | salt, to taste |
| 1 Tbsp | freshly ground black pepper |
| 1 cup | sour cream |
| 1 Tbsp | chopped parsley (optional) |
Directions
- Cook noodles according to package directions.
- Meanwhile, cook bacon in a non-stick skillet over medium heat for 3 to 4 minutes, or until slightly crisp. Drain off excess fat.
- Add olive oil, butter, onions, garlic, and mushrooms and saute until onions are translucent, about 3 to 4 minutes.
- Add tomato paste, paprika and salt. Let simmer for 2 to 3 minutes, or until fragrant. Remove from heat, stir in the sour cream, and season to taste with salt and pepper.
- Spoon mixture over warm noodles. Top with chopped parsley, if desired.
