Carnitas & Corn Pasta

This simmering, sizzling pulled pork dish is quick, easy, and worth making for the aroma alone. Loaded with flavor, this one will have everyone asking for a plate.

Ingredients
| 6 oz | No Yolks Broad Egg White Pasta |
| 1 Tbsp | olive oil |
| 1 | small red onion, chopped |
| 2 | ears corn, removed from cob |
| 1 cup | heirloom cherry tomatoes, halved |
| 8 oz | pulled pork, prepared & heated |
| 1 cup | salsa verde |
Directions
- Cook pasta according to package instructions.
- In a large sauté pan over medium heat, add olive oil. Stir in red onion, fresh corn, cherry tomatoes and pulled pork. Cook 3-4 minutes, or until tender crisp.
- Stir in the salsa verde, then cook for an additional 5-10 minutes, or until heated through.
- Stir in pasta.
- To serve, garnish with sliced radishes, queso fresco, cilantro, and lime wedges. Drizzle with additional salsa verde, if desired.
