Antipasto Salad

2 cupsNo Yolks® Broad Noodles
1roasted red pepper, cut into strips
6 1/2 ozmarinated artichoke hearts, drained and chopped
1/4 cupKalamata olives, pitted and chopped
1/2 cupcherry tomatoes, halved
1 1/2 Tbspsreduced-fat Italian salad dressing
1/8 tspsalt
1/8 tspground black pepper
2 ozsliced salami, cut into strips


  1. Prepare noodles according to package directions.  Drain and rinse under cold water. Drain well.
  2. Place noodles in large serving bowl. Add roasted pepper strips, artichoke hearts, olives and tomatoes. Toss gently but well.
  3. Add dressing, salt and pepper. Toss again. Arrange salami strips over salad.
