Carnitas & Corn Pasta

This simmering, sizzling pulled pork dish is quick, easy, and worth making for the aroma alone. Loaded with flavor, this one will have everyone asking for a plate.


6 ozNo Yolks Broad Egg White Pasta
1 Tbspolive oil
1small red onion, chopped
2ears corn, removed from cob
1 cupheirloom cherry tomatoes, halved
8 ozpulled pork, prepared & heated
1 cupsalsa verde


  1. Cook pasta according to package instructions.
  2. In a large sauté pan over medium heat, add olive oil. Stir in red onion, fresh corn, cherry tomatoes and pulled pork. Cook 3-4 minutes, or until tender crisp.
  3. Stir in the salsa verde, then cook for an additional 5-10 minutes, or until heated through.
  4. Stir in pasta.
  5. To serve, garnish with sliced radishes, queso fresco, cilantro, and lime wedges. Drizzle with additional salsa verde, if desired.
