Carnitas & Corn Pasta

This simmering, sizzling pulled pork dish is quick, easy, and worth making for the aroma alone. Loaded with flavor, this one will have everyone asking for a plate.
|6 oz||No Yolks Broad Egg White Pasta|
|1 Tbsp||olive oil|
|1||small red onion, chopped|
|2||ears corn, removed from cob|
|1 cup||heirloom cherry tomatoes, halved|
|8 oz||pulled pork, prepared & heated|
|1 cup||salsa verde|
- Cook pasta according to package instructions.
- In a large sauté pan over medium heat, add olive oil. Stir in red onion, fresh corn, cherry tomatoes and pulled pork. Cook 3-4 minutes, or until tender crisp.
- Stir in the salsa verde, then cook for an additional 5-10 minutes, or until heated through.
- Stir in pasta.
- To serve, garnish with sliced radishes, queso fresco, cilantro, and lime wedges. Drizzle with additional salsa verde, if desired.
