Cheesy Miso Sweet Potato Noodles

1 packageNo Yolks® Extra Broad Noodles
1/4 cupunsalted butter
3 Tbspall-purpose flour
2 cupswhole milk
1 (15-oz) cansweet potato puree
2 Tbspwhite miso paste
1 tspDijon mustard
2 cupsshredded cheddar cheese
1 tspcrushed red pepper flakes
2green onions, thinly sliced


  1. Cook the No Yolks® Noodles according to package instructions. Drain. Set aside.
  2. In a large heavy-bottom pot or Dutch oven over medium heat, melt the butter. Add the flour and cook until no lumps remain, about 1 minute.
  3. Whisk in the milk, sweet potato puree, miso and mustard. Simmer, over medium-low heat, stirring frequently, until sauce thickens, about 10-15 minutes.
  4. Remove from heat and stir in the cheese until smooth, about 2 minutes. Add the noodles and toss to coat. Top with the crushed red pepper flakes and green onions. Serve.
