Cold Vegetable Noodle Bowl

|12 oz||No Yolks Stir Fry Noodles|
|8 oz||sugar snap peas|
|1 cup||frozen edamame, thawed|
|8 oz||shredded carrots|
|1 can||(8 oz.) sliced bamboo shoots, drained|
|lemon vinaigrette dressing|
|1 can||French fried onions|
|fresh mint leaves (optional)|
- Prepare noodles according to package directions. About 1 to 2 minutes before pasta is ready, add peas to boiling water to blanch. Drain and rinse noodles and peas in cold water.
- In a large bowl, combine cooked noodles, snap peas, edamame, carrots and bamboo shoots. Add dressing and toss to coat all ingredients. Chill.
- Serve topped with onions and mint leaves.
