Cold Vegetable Noodle Bowl

12 ozNo Yolks Stir Fry Noodles
8 ozsugar snap peas
1 cupfrozen edamame, thawed
8 ozshredded carrots
1 can(8 oz.) sliced bamboo shoots, drained
lemon vinaigrette dressing
1 canFrench fried onions
fresh mint leaves (optional)


  1. Prepare noodles according to package directions. About 1 to 2 minutes before pasta is ready, add peas to boiling water to blanch.  Drain and rinse noodles and peas in cold water.
  2. In a large bowl, combine cooked noodles, snap peas, edamame, carrots and bamboo shoots. Add dressing and toss to coat all ingredients. Chill.
  3. Serve topped with onions and mint leaves.
