Ingredients
| 12 oz | No Yolks Extra Broad Noodles |
| 2 Tbsps | butter |
| 1 | shallot, chopped |
| 2 | garlic cloves, minced |
| coarse salt | |
| freshly ground black pepper | |
| 3/4 cup | low sodium chicken broth |
| 10 oz | fresh spinach leaves, chopped |
| 1 can | (14 oz.) marinated artichoke hearts, drained and chopped |
| 6 oz | cream cheese, softened |
| 1/4 cup | grated Parmesan cheese |
Directions
- Prepare noodles according to package directions. Drain.
- In a large skillet over medium heat, melt butter. Cook shallots until soft, then add garlic and cook 1 minute more. Season with salt and pepper.
- Add chicken broth and bring to a simmer. Add spinach, artichoke hearts, noodles, cream cheese, and Parmesan and stir to combine. Serve immediately.
