Noodles with Kale and Walnut Pesto

Homemade pesto is a great way to add flavor with little effort. Walnuts, kale and fresh lemon are a perfect pairing for No Yolks® Broad Noodles.

Ingredients
| 12 oz | No Yolks® Broad Noodles |
| 2 cups | kale, stems removed and roughly chopped |
| 1/2 cup | fresh basil leaves |
| 2/3 cup | freshly grated Parmesan cheese, divided |
| 2/3 cup | extra virgin olive oil |
| 1/4 cup | toasted walnuts |
| 1/4 cup | lemon juice |
| 1 tsp | lemon zest |
| 3 | garlic cloves, minced |
| 1 tsp | salt |
| 1/2 tsp | ground black pepper |
| 1/4 tsp | red pepper flakes |
Directions
- Prepare noodles according to package directions, under cooking by 2 minutes. Drain and reserve 1/4 cup of cooking liquid.
- Meanwhile, place kale, basil, half the cheese, olive oil, walnuts, lemon juice, lemon zest, garlic, salt, pepper and red pepper flakes in a food processor. Pulse until pureed.
- Toss noodles with pesto and reserved cooking liquid. Serve with remaining cheese.
