Smoked Salmon with Noodles

Quick to make, light to digest, and easy to enjoy. Throw it all together and let the cream dressing combine your favorite flavors.
|3 cups||No Yolks® Broad Noodles|
|1 cup||grape tomatoes, halved|
|1||red onion, chopped|
|1 Tbsp||capers, drained (optional)|
|4 oz||smoked salmon, thinly sliced|
|2 Tbsps||low fat cream cheese, softened|
|5 Tbsps||reduced fat sour cream|
|1 1/2 Tbsps||fresh dill, minced|
|1/4 tsp||ground black pepper|
|XX||lemon wedge (optional)|
|XX||fresh dill, for garnish|
- Prepare noodles according to package directions. Drain.
- Place cooked noodles in large shallow bowl. Add tomatoes, onion and capers. Toss gently but well. Arrange salmon on top.
- In a small bowl, beat together cream cheese and sour cream. Stir in dill weed, salt and pepper.
- Stir sour cream dressing into noodle salad or serve on the side. Garnish with lemon wedges and dill weed.
