Spicy Shrimp Salad

Another light noodle salad perfect for spicing up your lunch, this recipe is ready as quickly as you can sauté some shrimp.

Ingredients
| 2 cups | No Yolks® Broad Noodles |
| 2 tsps | Mexican-style seasoning blend |
| 1 lb | cooked shrimp, peeled and deveined |
| 1 cup | peas |
| 1 | scallions, minced |
| 1 | red bell pepper, chopped |
| 2 Tbsps | fresh lime juice |
| 4 tsps | canola oil |
| 1 1/2 tsps | honey |
| 1 Tbsp | fresh mint leaves, for garnish |
Directions
- Prepare noodles according to package directions; drain. Cool to room temperature. Place cooked noodles in a large bowl.
- Place spicy seasoning blend and shrimp in a plastic resealable bag, close and shake well to coat.
- Add shrimp and seasonings from bag, peas, scallions and bell pepper to bowl.
- In a small bowl, combine lime juice, oil, honey and mint. Stir well. Pour over salad; toss. Arrange in serving platter.
