Creamy Butternut Squash and Sausage Pasta

Ingredients

1 packageNo Yolks Broad Noodles
1butternut squash (cubed and roasted)
1yellow onion
2 Tbspolive oil
2 Tbspbutter
4garlic cloves
1Tbspflour
1/4 cupmilk
1 lbturkey sausage (cooked and crumbled)
Italian seasoning
Fresh sage
Shredded parmesan cheese

Directions

  1. Saute onion in a saucepan over medium heat with olive oil, until the onion turns clear.
  2. Add garlic and butter cooking for a minute or so, until fragrant.
  3. Add one tablespoon of flour and mix.
  4. Add in the milk, stirring until combined. Simmer until it starts to thicken.
  5. Boil water with salt and cook the No Yolks Noodles, according to the instructions on the package.
  6. Add in the noodles, sausage, roasted squash, sage, and cheese to the saucepan. Add a little of the pasta water if it becomes too dry.
  7. Mix well and serve hot.
